Amazing Apple Dijon Maple Dressing

The Goods:
½ cup of green apple (skin on, roughly chopped)
½ cup olive oil
1/3 cup apple cider vinegar
3 tbs of maple syrup
2 tbs of Brown Dog Fancy Dijon mustard
½ tsp of fresh thyme leaves
1 tsp of parsley, roughly chopped
Salt & pepper to taste
How To:
Put all ingredients into a blender. Process until smooth. You can strain out excess apples but I like texture in my dressings plus it adds fiber. Serve over salads, roasted vegetables (warm Brussels sprouts is a fave!) and even use as a pork marinade!
