GQC Tri -Tip Recipe
Serves 6-8 – Cook Time 20-40 min.
2-2 ½ pound tri tip lightly trimmed
Beef BBQ Rub
1-Chunk Hickory Wood
Beef BBQ Rub: In a small bowl mix all ingredients well.
2-tbsp kosher salt
1-tbsp coarse ground pepper
1-tbsp garlic powder
1-tbsp onion powder
1-tbsp chipotle powder
1-tbsp smoked paprika
1-tbsp turbinado sugar
1-tbsp chili powder
Set-up your charcoal grill in a two zone indirect (coals on one side of the grill) setup at 350F. Add the one chunk of wood 5 minutes before cooking.
Coat the tri-tip on both sides with the mustard and rub and let it sit out for one hour. Place the tri-tip on the fire side of the grill for 3-4 minutes, then flip and cook for another 3-4 minutes. Then place the tri-tip on the non-coal side of the drill and cook until desired doneness. We recommend an internal temperature of 135-140F for medium-rare.
Remove from grill and tent loosely to rest for 10-15 minutes. Slice against the grain and serve.
