Magnificent Maple Dijon Glazed Bacon

1 lb of thick cut bacon
1 tbs of Brown Dog Fancy Honey Dijon mustard
2 tbs of maple syrup
½ tbs of olive oil
Pepper to taste
Preheat oven to 375 degrees.
Mix the BDF mustard, maple syrup and olive oil in a bowl. Set aside.
Place bacon on a baking tray and place in oven. Cook bacon until almost done. This should take about 8-10 minutes. Remove bacon from oven, being careful of the rendered fat. Pour off the fat and brush the Dijon maple glaze onto both sides of the bacon. Place bacon back into the oven and finish cooking, approx. 3 to 4 minutes or until desired crispness.
